Palm soup base
The seed sauce is made from the natural pulp of palm fruit. Traditionally, the palm seeds are cooked and then crushed in a mortar to recover their juice. It is an unavoidable ingredient in West African cuisine, especially in Ivory Coast, Ghana, Guinea, Nigeria… etc… The seed sauce can be prepared with beef, lamb, goat meat, chicken or fish (especially smoked fish).
The TROFAI (or African Choice) seed sauce is a natural pulp juice from the fruit of the oil palm: the palm nut. The fruits are sorted, washed and blanched, pitted and finally pressed to obtain the seed sauce.
