Jasmine Broken rice
After wheat, rice is the most widely consumed cereal in the world. For many people, rice is the staple food in their diet. It provides more than 50% of daily energy intake. It is produced in more than 100 countries. The vast majority of the world’s production and consumption takes place in the East. Among the largest producers: China, India, Indonesia, Bangladesh and Thailand.
Thai rice belongs to the group of cereal products because of its high carbohydrate content, especially starch. Like other cereal products, its consumption will increase blood sugar levels. However, the soluble fibre contained in Thai rice bran could reduce the increase in blood glucose, which would be beneficial for people with diabetes.
Among ordinary white rice, i.e. rice that has been polished to remove the bran and germ (which reduces its fibre and nutrient content), we recommend Basmati rice or Jasmine rice (Thai rice), which are long-grain, very fragrant and tasty. Thai rice is perfect for Asian cuisine and dessert preparation. It has a unique flavour and a slightly sticky texture. Thai rice is a perfect accompaniment to all oriental dishes and is best eaten with chopsticks.
Effect on health
Rice is a good remedy for diarrhoea, being part of the BRCPG diet (banana, rice, applesauce and toast). It helps intestinal function to return to normal. It provides the energy needed by someone recovering from diarrhea. The protein content of rice ranges from 2.0 to 2.5 milligrams per 125 grams, which is lower than that of many cereals. On the other hand, its amino acid balance is better than that of many grains.
Cooking of the rice
For all cooking methods, rinse the rice before preparing it.
Add 1 cup of rice and 1.5 cups of water to the pressure cooker. When the pressure cooker stops, let stand 5 min before serving.
