Exotic millet seed mousse cake (degue)
THE INGREDIENTS
(for 4 persons)
3 pots of yogurt
2 tbsp. fresh cheese
1 liter of fresh cow’s milk
300 g of millet grains
100g of soft butter
3 gelatin leaves, honey
4 tsp. orange blossom water
3 tsp. rose water
50 g pineapple shavings
50 g of roasted pistachios
coconut powder
peanuts
STEPS
STEP 1: Heat the milk, remove it from the boil and add the gelatine leaves. Stir until they melt, then reserve the milk.
STEP 2: Add the butter to the millet rolled in grain, knead to obtain the cookie dough. Invert the dough in a mould, make it compact and put in the freezer for 10 minutes.
ETAPE 3 : In a salad bowl, whip the yoghurt, fresh cheese, milk, 2 tbsp. honey, 3 tsp. rose water, 4 tsp. orange blossom, 3 handfuls of coconut powder. Once the mixture is homogeneous, pour over the molded dough and set aside in the freezer for 1 to 2 hours.
Once unmolded, add the peanuts, pistachios and pineapple pieces. Let’s eat!
