Dehydrated potato powder – Kotoko
As its name suggests, Marché Afritibi offers you exclusive potato powder (Kotoko fufu). These are simply dried or dehydrated potatoes that are then crushed into powder. The potatoes are usually peeled, washed and sliced. They can be cut in several ways depending on their intended use. The potatoes are then dried in large industrial dryers. Dryers are essentially low temperature ovens in which a flow of dry air circulates. In North America, millions of tons of potatoes are dried each year by industry, and many people dry their own potatoes at home.
By being dried, potatoes have a longer shelf life than harvested potatoes. The powder is used to make mashed potatoes. It is also used as a flour in some recipes to thicken preparations. Most potato chips are made from a paste of dehydrated potato powder that has been rolled to the desired thickness.
