Cow skin

In Cameroon and Ivory Coast, considered by some as a meal for the poor, beef skin and tripe are now a staple in fast food restaurants. The kplô, as it is commonly called in Ivory Coast, is the smoked beef skin for consumption. Indeed, in ceremonies such as baptisms, birthdays and weddings, kplô still has its place on all menus.

In the majority of cases, kplô is found in the seed sauce or okra sauce that accompanies placali in Ivory Coast. In Cameroon, beef skin is often used as meat in Eru or Okok.
