Beef suya
Beef suya, distinct from soya, is a grilled meat skewer prepared in the Hausa tradition, with variations found in several West African countries; known as suya or sooya in Nigeria and chichinga in Ghana. Suya street vendors are a common sight on the corners of bustling African capitals, even in areas where meat is considered a luxury. Traditional suya is typically made with beef, though grilled lamb or chicken versions are also extremely popular.
The meat is marinated with a blend of spices including peanut powder, ground ginger, garlic powder, onion powder, salt, and White Penja Pepper. A touch of olive oil from Morocco is added to the mix for an explosion of flavor. Afritibi Market offers already marinated soy sauce for convenience. The skewers can be grilled for a barbecue or roasted in the oven to be served in sandwiches, providing a versatile and delicious option for meat lovers.
